Ingredients
1 lb. Wilders Mild Pork Ground Sausage
For an extra kick substitute with our Hot Pork Ground Sausage instead!
1/4 onion finely chopped
1/2 red bell pepper finely chopped
1/2 green bell pepper finely chopped
1/2 yellow bell pepper finely chopped
4-6 large eggs
Salt and Pepper for taste
Directions
1. Add Wilders Mild (or Hot) Pork Ground Sausage to skillet.
2. Break up sausage and allow it to cook over medium heat.
3. Add peppers and onions to sausage and let them sauté.
4. In a separate bowl, scramble eggs. Once scrambled, pour eggs over sausage and mix.
5. Continue to mix scramble until eggs and sausage are fully cooked.
6. Add salt and pepper to taste.
7. Serve and enjoy!

The Best Way to Season Cast Iron
If you don't have a cast iron skillet on hand in your kitchen, now is the time to get one! These "workhorses of the kitchen" are extremely versatile, allowing one to sear, fry, bake, roast, braise, and so much more! Here at Wilders we LOVE using cast iron skillets to prepare our 100% Wagyu beef and our Berkshire Pork too! Because our products have such defined and extensive marbling, using the cast iron skillet allows the meat to retain and baste in its own natural buttery flavors.
The true secret behind using a cast iron skillet is seasoning it correctly. Although most cast irons come pre-season these days, it is important to care for your skillet as the seasoning erodes over time. The Food Network recommends following these four simple steps for seasoning your cast iron skillet to create a flavor sure to enhance your cooking experience!
What You'll Need for Seasoning a Skillet
Cast Iron Skillet
Neutral Oil (canola or vegetable oil)
Paper Towels
An Oven Preheated to 350°F
Aluminum Foil
Directions
Coat Your Cast Iron Skillet with Oil
Dampen one paper towel with neutral oil. Using this paper towel, coat the entire cast iron skillet with oil (this includes the bottom and handle of the pan).
Using another paper towel, wipe away all excess oil. There should only be enough to coat the pan and it should feel dry to the touch.
If too much oil is used, it will develop a sticky feeling. Be sure there is only a thin layer of oil before step two!
Bake Your Coated Cast Iron Skillet with Oil
Line lower rack of oven with aluminum foil and preheat to 350°F.
Once the oven is heated, place the cast iron skillet upside down on center rack.
Bake for one hour. This allows the pan to develop a non-stick quality.
Leave Your Cast Iron Skillet to Cool in the Oven
After one hour, turn off the oven and allow the skillet to cool completely before removing.
Repeat for an Unseasoned/Stripped Skillet or As Needed
If your cast iron skillet is not already pre-seasoned, you should repeat these steps until your pan develops a smooth finish.
This method is tried and true here at Wilders! We highly recommend it for many of our products, especially our Prime Wagyu Steaks!

Featured Meats: Wilders 100% Fullblood Wagyu Flank Steak & Mott's Channel Seafood Lobster Tails
Ingredients
4 Tbsp. unsalted butter (room temperature)
2 tsp. minced shallot
1 garlic clove minced
2 tsp. minced fresh parsley
2 Mott's Channel Seafood lobster tails (5-6 ounces each)
2 Tbsp. fresh lemon juice
1 Wilders 100% Fullblood Wagyu Flank Steak
2 Tbsp. olive oil
2 tsp. kosher salt
1.5 tsp. black pepper
Lemon wedges (for serving)
Directions
Make the compound butter.
In a small bowl, use a fork to combine butter, minced shallot, minced garlic clove, and fresh parsley.
Transfer the butter mixture to a sheet of wax paper/plastic wrap and form the mixture into a 1-2 inch thick log. Roll tightly and freeze for 10 minutes to solidify, then transfer to refrigerator.
Preheat the oven to 375°F and place rack in the center. Line baking sheet with aluminum foil and spray with non-stick spray.
Prepare the lobster tails.
Using kitchen shears, split the tip shells of the lobster tails in half lengthwise.
Gently insert an upside-down teaspoon between the underside of the shell and the meat and loosen the meat.
Place lobster tails on the prepared baking sheet. Drizzle with lemon juice and add one pat of compound butter for each tail. Set aside.
Prepare the steak.
Drizzle Wilders 100% Fullblood Wagyu Flank Steak with 1 Tbsp. olive oil and then season both sides with salt and pepper.
Add 1 Tbsp. of compound butter in a cast iron skillet over medium-high heat.
Cook Steak and Lobster.
Place lobster tails in the oven and cook for 6-8 minutes until meat is firm and opaque.
Add steak to the cast iron skillet and sear on both sides for approximately 3 minutes. Remove cast iron skillet from stovetop.
Place cast iron skillet into oven and cook an additional 3-4 minutes or until steak reaches 125-130°F for a medium-rare cook.
Remove steak from oven and allow it to rest while the lobster tails finish cooking.
Serve and Enjoy!
To serve, arrange sliced flank steak and lobster tails on individual plates, top with a pat of compound butter, and garnish with lemon wedges.

JUICY GRILLED PORK CHOPS
Featured Meat: Wilders Bone-In Pork Chops

Ingredients
Wilders Bone-In Pork Chops
1/4 Cup Honey
2 Tbsp. Vegetable Oil
1 Tbsp. Apple Cider Vinegar
1 Tsp. ground cumin
1/2 Tsp. Red Pepper Flakes
Salt and Pepper
Directions
In a small bowl, mix together the honey, oil, vinegar, cumin, and red pepper flakes to make a marinade.
Season both sides of the pork chops with with salt and pepper then place in a re-sealable plastic along with the marinade. Let sit for one hour.
Heat your grill or pan to a medium heat.
Once heated, remove pork chops from bag, season with salt and pepper again, and place on grill for about 4 minutes.
Flip the pork chops and cook the other side for an additional 3 minutes. Make sure the internal temperature reaches 145°F before removing from heat.
Let rest for 5 minutes and enjoy!
CLASSIC DOUBLE CHEESE BURGER

Ingredients
Wilders Wagyu Burger Patties
2 Tbsp. Chili Sauce
2. tsp. Worcestershire Sauce
2 tsp. Prepared Mustard
3 Slices American or Cheddar Cheese halved
3 Slices Swiss Cheese halved
3 Hamburger Buns Split and Toasted
Optional: Cooked Wilders Bacon, Lettuce leaves, Sliced Tomato, Sliced Onion, Ketchup, Mustard
Directions
Slather burger patties in chili sauce, Worcestershire sauce, and prepared mustard
Grill burgers, covered, on an oiled rack over medium direct heat for about 6 minutes each side.
Allow burgers to reach 160° and juices run clear.
During the last minute of cooking, top each patty with a triangle of American cheese and Swiss cheese.
Butter and toast buns and serve with desired toppings!
BRATS WITH PEPPERS AND ONIONS
Featured Meat: Wilders Bratwurst

Ingredients
2 Packs of Wilders Bratwursts
1/4 cup (1/2 stick) unsalted butter
1 large red bell pepper, cut lengthwise into 1/3-inch-wide strips
1 large yellow bell pepper, cut lengthwise into 1/3-inch-wide strips
1 medium jalapeño chile pepper, finely chopped
1 medium red onion, cut in half and thinly sliced
1 teaspoon fennel seed
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup beer, preferably lager or ale, plus more if needed
2 tablespoons spicy brown mustard
8 large hot dog buns, split
Directions
Prepare grill for direct and indirect cooking over medium heat.
In a large disposable foil pan over direct heat, melt the butter.
Add peppers, onions, fennel seed, salt, and pepper. Mix well, close lid, and allow veggies to cook until tender and golden brown in spots- about 15 minutes. Stir occasionally.
Add beer and mustard to the veggies and mix well. Slide pan over indirect heat to keep warm.
Grill brats over direct medium heat with the lid closed until lightly charred on all sides.
Transfer bratwursts to pan and smother with peppers and onions. Cook over indirect medium heat with the lid closed until fully cooked (160°Fz0.
During the last 30 seconds of cooking, butter and toast the buns side down over direct heat
Serve brats in buns with the peppers on top and enjoy!
COWBOY PASTA SALAD
Featured Meat: Wilders Wagyu Ground Beef

Ingredients
Pasta Salad:
1 pound mini farfalle or other small pasta such as rigatoni or shells
1 pound ground beef
1 4 oz. can mild diced green chiles
1 tsp EACH chili powder, ground cumin
3/4 tsp EACH garlic powder, onion powder, salt (omit salt if using ground turkey and bouillon)
4-6 tablespoons diced canned/pickled jalapeño peppers (from 4 oz. can)
1 green bell pepper chopped
1 15 oz. can black beans rinsed and drained
corn from 1 ear sweet corn
1 pint cherry tomatoes halved
1 cup cubed sharp cheddar cheese
1/4 small red onion chopped
1/4 cup chopped cilantro
Dressing:
1/3 cup ketchup
1/3 cup mayonnaise
1/3 cup sour cream may sub plain Greek yogurt
1/4 cup salsa medium if you like a kick
1 1/2 tablespoons brown sugar
1 tablespoon Worcestershire Sauce
1 tablespoon yellow mustard
1 tablespoon apple cider vinegar, plus more to taste
1/4 tsp EACH smoked paprika, salt, pepper
Hot sauce/Tabasco to taste
Directions
Whisk together all of the dressing ingredients in a medium bowl and set aside.
Cook pasta just until al dente according to package directions. Rinse with cold water and drain. Add to a large serving bowl and toss with half of the dressing.
Brown ground beef in a large skillet over medium heat. Stir in green chiles and all spices. Set aside to cool while you chop your veggies.
Add beef and all remaining salad ingredients to pasta.
Add hot sauce for spicier, apple cider vinegar for tangier, brown sugar for less tangy if desired.
Enjoy!
LOADED BAKED POTATO SALAD RECIPE
Featured Meat: Wilders Bacon

Ingredients
2 pounds russet potatoes , about 6 medium-size
1 cup sour cream
1 cup mayo
8 slices bacon , cooked and chopped
5 green onions , chopped
1 cup shredded cheddar cheese
Salt and freshly ground pepper, to taste
Directions
Preheat the oven to 400 degrees F. Wash potatoes and prick them with a fork or knife.
Bake 50 to 60 minutes or until the are fork tender. Remove from oven and cool completely.
Peel potatoes and cut into small pieces.
Combine the sour cream and mayo in a bowl and stir.
Add the potatoes to a large serving bowl. Season well with salt and pepper. Add sauce (just enough to coat) and gently stir.
Add bacon, onion, and cheese, reserving some for topping at the end and gently stir to combine.
Top salad with remaining toppings and enjoy!

Growing up in the cattle business, Jake is extremely knowledgable in how to raise our herd. As the Farm Manager, Cody Hairr plays a huge role in the day-to-day logistics at the Wilders farm. Although he is very professional in his work, Cody is also known as an absolute prankster to some! Cody is the proud dad of two and together he and his wife, Turner, enjoy living life to its absolute fullest.
Meet JT
Although his technical title may be the Facilities Manager here at Wilders, Jason Taylor is a jack of all trades and the go-to chef down at the farm. JT and his wife, April, are blessed with an incredibly beautiful family and one of their sons, Dylan, even works on the farm!
Meet Dylan
Dylan Yates began his WILD career with One27 Homes but after helping some projects at the farm, Wilders quickly scooped him up and now he is our Assistant Project Coordinator! He and his wife, Sierra, share two wonderful children and have even made some more additions to the family! The Yates Family loves farming so much they have begun raising some pigs and chickens of their own.
Meet John
As the newest member of the Farming Fathers crew, John Tart rounds out our group of WILD dads. As Wilders' Farm Coordinator, John oversees the daily feed management and health of the herd. He and his wife, Jessica, have a sweet baby girl and we are so grateful to have him on our team!
We are beyond grateful for all our WILD Dads and wish them and their families a very Happy Father's Day!

As the days get longer and the sun gets hotter, it can only mean one thing... summer is almost here! Soon enough, the kids will be out of school, families will be flocking to the beach, and the neighborhood pool will be at maximum capacity.

Located right at the coast, the Wrightsville Beach Farmers Market is the perfect place to visit during your beach trip! Whether you stop by on your way to the sand or after a full morning in the sun, we are ready to chat with you all things Wagyu! Just look for our Wilders tent and we'll see you there!
POPLAR GROVE FARMERS MARKET

Tucked beneath large, beautiful oak trees, the Poplar Grove Farmers Market carries a unique and humble charm. The Poplar Grove Plantation is home to many historical sites and houses a museum as well! We love our fellow vendors at this market and believe it is an incredible place to spend a free Wednesday morning. So after you walk around the area, be sure to find our Wilders tent and come say hey!

Taking place right in the heart of North Hills, the Midtown Farmers Market is definitely a bucket list item that you need to check off this summer! With so many things to do within the area, this market has something for everyone in your family or friend group. This market is a Wilders favorite and we cannot wait to see you there on Saturday!

We may be new to this market, but so far it's been a hoot! Starting this past weekend, you can find Wilders right in the heart of Downtown Raleigh every other Sunday! So if you are unable to see us on Saturdays at Midtown or are just looking for a double dose, be sure to come visit us at Moore Square! As they say, be there or be square!
WENDELL FARMERS MARKET

If you're looking for the perfect mix of a fun but chill night out, then the Wendell Farmers Market is for you! On the first Thursday of every month, you can find Wilders in Wendell! This market is an absolute vibe with its live music and terrific food trucks and we'd love to spend it with you!
