What sets Wilders Reserve apart? Each cut comes from cattle with elite genetics and marbling scores over 50% DMP (a precise measurement of intramuscular fat). That’s as close as you can get to authentic Japanese A5 Wagyu, raised right here in the United States. This level of marbling delivers an indulgence unlike any other—an extra rich, extra tender Wagyu beef experience.
Every Reserve cut is hand-selected, aged for peak flavor, and sourced from cattle raised in Eastern North Carolina. Reserve offers purity and provenance to match its prestige, with only the most exceptional portions earning the Wilders Reserve label.
Choosing Wilders Reserve means choosing the ultimate expression of Wagyu—crafted for those who expect nothing less than the finest.
FAQ
Every Wilders Reserve cut comes from our 100% Fullblood Wagyu cattle and is selected for superior quality and marbling. These are the cuts we reserve for customers looking for an elevated steak experience.
Yes. Every Wilders Reserve product comes from 100% Fullblood Wagyu cattle with bloodlines that trace back to the original Japanese foundation genetics. Nothing is crossbred.
Producing 100% Fullblood Wagyu takes more time, care, and resources than conventional beef. Combined with the exceptional marbling and limited availability of these premium cuts, it creates an unmatched dining experience.
Because of the rich marbling, a little goes a long way. We recommend seasoning simply with salt and pepper and cooking to medium-rare or medium to let the natural flavor shine.
Same as our regular product, Reserve orders are carefully packed with insulation, dry ice, and gel packs to help ensure your beef arrives frozen and ready for your freezer.
Many of our Reserve cuts are available throughout the year, but quantities are very limited. Some specialty cuts and restocks sell out quickly due to limited supply.
