From ground sausage, to link sausage, to bacon, we have all you need to take your breakfast game to the next level! Wilders Mild Pork Ground Sausage For an extra kick substitute with our Hot Pork Ground Sausage instead! 1/4 onion finely chopped 1/2 red bell pepper finely chopped 1/2 green bell pepper finely chopped 1/2 yellow bell pepper finely chopped 4-6 large eggs Salt and Pepper for taste   Directions   1. Add Wilders Mild (or Hot) Pork Ground Sausage to skillet.    2. Break up sausage and allow it to cook over medium heat.   3. Add peppers and onions to sausage and let them sauté.    4. In a separate bowl, scramble eggs. Once scrambled, pour eggs over sausage and mix.    5. Continue to mix scramble until eggs and sausage are fully cooked.   6. Add salt and pepper to taste.   7. If you don't have a cast iron skillet on hand in your kitchen, now is the time to get one! These "workhorses of the kitchen" are extremely versatile, allowing one to sear, fry, bake, roast, braise, and so much more! Here at Wilders we LOVE using cast iron skillets to prepare our 100% Wagyu beef and our Berkshire Pork too! Because our products have such defined and extensive marbling, using the cast iron skillet allows the meat to retain and baste in its own natural buttery flavors. The true secret behind using a cast iron skillet is seasoning it correctly. Although most cast irons come pre-season these days, it is important to care for your skillet as the seasoning erodes over time. The Food Network recommends following these four simple steps for seasoning your cast iron skillet to create a flavor sure to enhance your cooking experience! What You'll Need for Seasoning a Skillet Cast Iron Skillet Neutral Oil (canola or vegetable oil) Paper Towels An Oven Preheated to 350°F Aluminum Foil Directions Coat Your Cast Iron Skillet with Oil Dampen one paper towel with neutral oil. Using this paper towel, coat the entire cast iron skillet with oil (this includes the bottom and handle of the pan). Using another paper towel, wipe away all excess oil. There should only be enough to coat the pan and it should feel dry to the touch. If too much oil is used, it will develop a sticky feeling. Be sure there is only a thin layer of oil before step two! Bake Your Coated Cast Iron Skillet with Oil Line lower rack of oven with aluminum foil and preheat to 350°F. Once the oven is heated, place the cast iron skillet upside down on center rack. Bake for one hour. This allows the pan to develop a non-stick quality. Leave Your Cast Iron Skillet to Cool in the Oven After one hour, turn off the oven and allow the skillet to cool completely before removing.  Repeat for an Unseasoned/Stripped Skillet or As Needed If your cast iron skillet is not already pre-seasoned, you should repeat these steps until your pan develops a smooth finish. This method is tried and true here at Wilders! We highly recommend it for many of our products, especially our Prime Wagyu Steaks!

Want to switch up one of your date nights this summer? Stay in and try this incredible surf & turf recipe for two! *Recipe Credits to The Cookie Rookie & No. 2 Pencil Featured Meats: Wilders 100% Fullblood Wagyu Flank Steak & Mott's Channel Seafood Lobster Tails Ingredients 4 Tbsp. unsalted butter (room temperature) 2 tsp. minced shallot 1 garlic clove minced 2 tsp. minced fresh parsley 2 Mott's Channel Seafood lobster tails (5-6 ounces each) 2 Tbsp. fresh lemon juice 1 Wilders 100% Fullblood Wagyu Flank Steak 2 Tbsp. olive oil 2 tsp. kosher salt 1.5 tsp. black pepper Lemon wedges (for serving) Directions Make the compound butter. In a small bowl, use a fork to combine butter, minced shallot, minced garlic clove, and fresh parsley. Transfer the butter mixture to a sheet of wax paper/plastic wrap and form the mixture into a 1-2 inch thick log. Roll tightly and freeze for 10 minutes to solidify, then transfer to refrigerator.  Preheat the oven to 375°F and place rack in the center. Line baking sheet with aluminum foil and spray with non-stick spray. Prepare the lobster tails.  Using kitchen shears, split the tip shells of the lobster tails in half lengthwise. Gently insert an upside-down teaspoon between the underside of the shell and the meat and loosen the meat.  Place lobster tails on the prepared baking sheet. Drizzle with lemon juice and add one pat of compound butter for each tail. Set aside. Prepare the steak. Drizzle Wilders 100% Fullblood Wagyu Flank Steak with 1 Tbsp. olive oil and then season both sides with salt and pepper.  Add 1 Tbsp. of compound butter in a cast iron skillet over medium-high heat.  Cook Steak and Lobster. Place lobster tails in the oven and cook for 6-8 minutes until meat is firm and opaque. Add steak to the cast iron skillet and sear on both sides for approximately 3 minutes. Remove cast iron skillet from stovetop. Place cast iron skillet into oven and cook an additional 3-4 minutes or until steak reaches 125-130°F for a medium-rare cook. Remove steak from oven and allow it to rest while the lobster tails finish cooking. Serve and Enjoy! To serve, arrange sliced flank steak and lobster tails on individual plates, top with a pat of compound butter, and garnish with lemon wedges.  Like what you made? The 4th of July weekend is coming up and let the countdown begin! It's almost time to kick-back, relax, and of course, throw some good food on the grill! Around here, there's simply no better way to do just that than with these 5 WILD All-American 4th of July recipes! Be sure to check out Wilders' 4th of July Sale for all the main essentials! JUICY GRILLED PORK CHOPS  Featured Meat: Wilders Bone-In Pork Chops *Recipe Credits to Kristine's Kitchen Blog Ingredients Wilders Bone-In Pork Chops 1/4 Cup Honey 2 Tbsp. Vegetable Oil 1 Tbsp. Apple Cider Vinegar 1 Tsp. ground cumin 1/2 Tsp. Red Pepper Flakes Salt and Pepper Directions In a small bowl, mix together the honey, oil, vinegar, cumin, and red pepper flakes to make a marinade. Season both sides of the pork chops with with salt and pepper then place in a re-sealable plastic along with the marinade. Let sit for one hour. Heat your grill or pan to a medium heat.  Once heated, remove pork chops from bag, season with salt and pepper again, and place on grill for about 4 minutes. Flip the pork chops and cook the other side for an additional 3 minutes. Make sure the internal temperature reaches 145°F before removing from heat.  Let rest for 5 minutes and enjoy! CLASSIC DOUBLE CHEESE BURGER Featured Meat: Wilders Wagyu Burger Patties  *Recipe Credits to Taste of Home Ingredients Wilders Wagyu Burger Patties 2 Tbsp. Chili Sauce 2. tsp. Worcestershire Sauce 2 tsp. Prepared Mustard 3 Slices American or Cheddar Cheese halved 3 Slices Swiss Cheese halved 3 Hamburger Buns Split and Toasted Optional: Cooked Wilders Bacon, Lettuce leaves, Sliced Tomato, Sliced Onion, Ketchup, Mustard Directions Slather burger patties in chili sauce, Worcestershire sauce, and prepared mustard Grill burgers, covered, on an oiled rack over medium direct heat for about 6 minutes each side. Allow burgers to reach 160° and juices run clear. During the last minute of cooking, top each patty with a triangle of American cheese and Swiss cheese. Butter and toast buns and serve with desired toppings!   BRATS WITH PEPPERS AND ONIONS Featured Meat: Wilders Bratwurst *Recipe Credits to Weber Ingredients 2 Packs of Wilders Bratwursts 1/4 cup (1/2 stick) unsalted butter 1 large red bell pepper, cut lengthwise into 1/3-inch-wide strips 1 large yellow bell pepper, cut lengthwise into 1/3-inch-wide strips 1 medium jalapeño chile pepper, finely chopped 1 medium red onion, cut in half and thinly sliced 1 teaspoon fennel seed 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 1 cup beer, preferably lager or ale, plus more if needed 2 tablespoons spicy brown mustard 8 large hot dog buns, split Directions Prepare grill for direct and indirect cooking over medium heat. In a large disposable foil pan over direct heat, melt the butter. Add peppers, onions, fennel seed, salt, and pepper. Mix well, close lid, and allow veggies to cook until tender and golden brown in spots- about 15 minutes. Stir occasionally. Add beer and mustard to the veggies and mix well. Slide pan over indirect heat to keep warm. Grill brats over direct medium heat with the lid closed until lightly charred on all sides.  Transfer bratwursts to pan and smother with peppers and onions. Cook over indirect medium heat with the lid closed until fully cooked (160°Fz0. During the last 30 seconds of cooking, butter and toast the buns side down over direct heat  Serve brats in buns with the peppers on top and enjoy! COWBOY PASTA SALAD Featured Meat: Wilders Wagyu Ground Beef *Recipe Credits to Carl's Bad Cravings Ingredients Pasta Salad: 1 pound mini farfalle or other small pasta such as rigatoni or shells 1 pound ground beef  1 4 oz. can mild diced green chiles 1 tsp EACH chili powder, ground cumin 3/4 tsp EACH garlic powder, onion powder, salt (omit salt if using ground turkey and bouillon) 4-6 tablespoons diced canned/pickled jalapeño peppers (from 4 oz. can) 1 green bell pepper chopped 1 15 oz. can black beans rinsed and drained corn from 1 ear sweet corn 1 pint cherry tomatoes halved 1 cup cubed sharp cheddar cheese 1/4 small red onion chopped 1/4 cup chopped cilantro Dressing: 1/3 cup ketchup 1/3 cup mayonnaise 1/3 cup sour cream may sub plain Greek yogurt 1/4 cup salsa medium if you like a kick 1 1/2 tablespoons brown sugar 1 tablespoon Worcestershire Sauce  1 tablespoon yellow mustard 1 tablespoon apple cider vinegar, plus more to taste 1/4 tsp EACH smoked paprika, salt, pepper Hot sauce/Tabasco to taste Directions Whisk together all of the dressing ingredients in a medium bowl and set aside. Cook pasta just until al dente according to package directions. Rinse with cold water and drain. Add to a large serving bowl and toss with half of the dressing. Brown ground beef in a large skillet over medium heat. Stir in green chiles and all spices. Set aside to cool while you chop your veggies. Add beef and all remaining salad ingredients to pasta. Add hot sauce for spicier, apple cider vinegar for tangier, brown sugar for less tangy if desired. Enjoy! LOADED BAKED POTATO SALAD RECIPE Featured Meat: Wilders Bacon *Recipe Credits to Tastes's Better from Scratch Ingredients 2 pounds russet potatoes , about 6 medium-size 1 cup sour cream 1 cup mayo 8 slices bacon , cooked and chopped 5 green onions , chopped 1 cup shredded cheddar cheese Salt and freshly ground pepper, to taste Directions Preheat the oven to 400 degrees F. Wash potatoes and prick them with a fork or knife. Bake 50 to 60 minutes or until the are fork tender. Remove from oven and cool completely. Peel potatoes and cut into small pieces. Combine the sour cream and mayo in a bowl and stir.  Add the potatoes to a large serving bowl. Season well with salt and pepper. Add sauce (just enough to coat) and gently stir. Add bacon, onion, and cheese, reserving some for topping at the end and gently stir to combine. Top salad with remaining toppings and enjoy!

Father's Day is an incredible opportunity to show appreciation for all the fathers and father-figures out there in the world. So, in honor of Father's Day being this weekend, we wanted to go ahead and celebrate our WILD dads! They may be great farmers, but trust us, the men on the Wilders farm are even better dads!   Meet Reid Reid Smith is our founder of Wilders, and although he is proud of the businesses he and his wife, Jaclyn, have built, nothing brings him more pride and joy than his family. Together, Reid and Jaclyn are the amazing parents of their three wonderful children who love to be helping hands on the farm! Meet Jake Jake Newbold is the Director of Agriculture here at Wilders and we surely couldn't do what we do without him. Growing up in the cattle business, Jake is extremely knowledgable in how to raise our herd. He and his wife, Catherine, are amazing parents to their beautiful little girl and together they really enjoy farm life! Meet Cody As the Farm Manager, Cody Hairr plays a huge role in the day-to-day logistics at the Wilders farm. Although he is very professional in his work, Cody is also known as an absolute prankster to some! Cody is the proud dad of two and together he and his wife, Turner, enjoy living life to its absolute fullest.  Meet JT Although his technical title may be the Facilities Manager here at Wilders, Jason Taylor is a jack of all trades and the go-to chef down at the farm. JT and his wife, April, are blessed with an incredibly beautiful family and one of their sons, Dylan, even works on the farm! Meet Dylan   Dylan Yates began his WILD career with One27 Homes but after helping some projects at the farm, Wilders quickly scooped him up and now he is our Assistant Project Coordinator! He and his wife, Sierra, share two wonderful children and have even made some more additions to the family! The Yates Family loves farming so much they have begun raising some pigs and chickens of their own.  Meet John As the newest member of the Farming Fathers crew, John Tart rounds out our group of WILD dads. As Wilders' Farm Coordinator, John oversees the daily feed management and health of the herd. He and his wife, Jessica, have a sweet baby girl and we are so grateful to have him on our team! Happy June everyone! It's hard to believe, but in just 30 days we will be halfway through 2023. Before we get there though, there's still one more important holiday to start planning for: Father's Day. We're still a few weeks out, but it's never too early to think about that perfect gift for Dad—especially since we all know that dads are practically impossible to shop for! Memorial Day is right around the corner and we all know what that means! It's time to fire up the grill and create some memorable moments with friends and family. There's no better way to kick off this grilling season than with these 5 WILD Memorial Day recipes.  Be sure to check out Wilders' Memorial Day Sale, for all the main essentials! CLASSICS WITH A TWIST   BACON BURGERS  Featured Meats: Pasture-Raised Wagyu Ground Beef & Pasture-Raised Uncured Bacon *Recipe Credits to The Spruce Eats  Ingredients  1 1/2 pounds Wilders Wagyu ground beef 1/2 cup finely chopped onion 2 Wilders pork bacon slices, diced 1 tablespoon Worcestershire sauce 1 1/4 cups fresh soft breadcrumbs 1 large egg 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 3 tablespoons all-purpose flour Vegetable oil, for the grill Directions Combine together your ground beef, onion, bacon, Worcestershire sauce, breadcrumbs, egg, salt, and pepper. Make sure it’s all blended together! Make 6 equally shaped patties and sprinkle them lightly with flour on both sides. Fire up the grill! Heat one side to medium-high heat (400-470°F) and the other side to low heat (200-250°F).  Now you’re ready to get cooking! Put your burgers on the medium-high heat side until them become well-browned or about 2 minutes on each side. Move them over to the low heat side and let them cook to your desire, about 3-5 minutes (at least 165°F).  Now it’s time to complete your epic bacon burger! Toast your bun and get to adding toppings! GRILLED BEER BRATS Featured Meat: Pasture-Raised Pork Bratwurst *Recipe Credits to Plays Well With Butter Ingredients  24 ounces of beer (whatever kind you like) 1 pack of Wilders Pork Bratwurst 1 medium yellow onion, sliced Directions Marinate the brats in beer for 6-24 hours. The longer the better! Using a cast iron skillet, boil the the brats and sliced onions in beer for 10-15 minutes or until internal temperature is 145°F.  It's time to grill! Transfer the brats from the skillet to the grill gates, turning them every few minutes until they are charred to your desire and internal temperature it at least 165°F. (Optional) Cook the sliced onions to add as a topping to your brat! Or keep it classic and just add your favorite mustard! STEAK SENSATIONS COOKING NEW YORK STRIP   Featured Meat: Pasture-Raised Wagyu New York Strip Steak  *Recipe Credits to Hey Grill Hey   Ingredients  Wilders New York Strip Steak Kosher or course salt Butter mixture (optional) Directions Take your steak out of the fridge and grab your preferred salt! Rub it into the meat and allow it to come to temperature. Heat up your grill to high heat, roughly 900°F on the grates. Once the grill is hot and ready, place your steak diagonally on the grates. Let it rest there for 2-3 minutes. Flip it and let it cook for another 2-3 minutes! This achieves a medium rare style. Challenge! Try to turn your steak at a 45 degree angle before flipping it to the other side. Can you make those criss-cross lines? After you finish grilling it, place the NY Strip on top of your smeared butter mixture (optional) and let it sit for 8-10 minutes. Enjoy! CHUCK RANCH STEAK Featured Meat: Pasture-Raised Wagyu Chuck Ranch Steak   *Recipe Credits to Dinner at the Zoo & Kitchen Laughter   Ingredients  1 Wilders Chuck Ranch Steak 1/3 cup soy sauce 1/4 cup lemon juice 1/2 cup olive oil 1/4 cup Worcestershire sauce 2 teaspoons minced garlic 1 tablespoon Italian seasoning 1 teaspoon black pepper 1/2 teaspoon salt 1/2 teaspoon onion powder Directions Place all ingredients except the steak into a bowl. Mix to combine. Add steaks to the marinade and let marinate for 1-24 hours. The longer, the more flavorful! Fire up the grill and preheat to a medium-high heat of 375-400°F. Grill each side of the chuck ranch steak for about 4 minutes for a medium rare (130°F-135°F) to medium (135°F-145°F) finish. Cooking it above this temperature may dry out the meat. Let the steak to rest for 5 minutes, allowing all the juices to settle within the steak. OUR TEAM'S WILDCARD SMOKED BOSTON BUTT   Featured Meat: Pasture-Raised Pork    *Recipe Credits to allrecipes   Ingredients  4 tablespoons packed brown sugar 2 tablespoons ground your favorite chili powder 7 pounds of Wilders Boston Butt 1 pack of hamburger buns Directions Preheat your outdoor smoker to 200-225°F. Mix together brown sugar and chili powder in a small bowl. Give the pork some love and rub it all over the Boston Butt! Place it in your smoker and let it cook 6-18 hours, checking on it occasionally. It should reach a temperature of 165°F. When it’s ready, let it 8-10 minutes before you get to shredding! Toast those buns and you’ve got yourself a Pulled Pork Sandwich! Add any sauces of your choosing!

  Our Wilders' ladies had a great opportunity through Got To Be NC to participate in the 2023 Flavors of the Carolinas Show in Concord, NC at the end of February! Jaclyn, Founder, and Danielle, Brand & Operations Manager, were in attendance with over 150 other exhibitors from across the state showcasing Wilders 100% Fullblood Wagyu Beef & Berkshire Pork. Each exhibitor had the chance to mingle and connect with retailers, distributors and restaurants from the Southeast. Over 500 attendees worked their way through the exhibitor hall over the course of five hours. This was an invitation-only event, and allowed attendees to sample locally grown and made products from North Carolina. It was also a chance for exhibitors to educate retailers and restaurants on their products and discuss wholesale pricing.  Jaclyn and Danielle had a packed day with a lot of interaction, being the only exhibitor to showcase locally raised 100% Fullblood Wagyu beef! With the help of Wilders' favorite caterer, J-Top's BBQ Shop, the ladies were able to serve attendees samples of Wilders 100% Fullblood Wagyu teriyaki meatballs, Wilders 100% Fullblood Wagyu steak crostinis with goat cheese and chimichurri, and Wilders Berkshire pork chili!  We are grateful for the connections that were made at this event between the Wilders team and other local producers and retailers and food industry professionals. We are already counting down the days until the next Flavors of the Carolinas Show in 2024!
