Instructions
1. Prep the Bacon:
Begin by cooking the Wilders thick-cut bacon seasoning pieces in a large pot over medium-high heat until they become crispy.
2. Sauté:
In the same pot with the bacon pieces, add the finely chopped garlic, onions, red bell pepper, and yellow bell pepper. Sauté them over medium heat until they become soft and fragrant, about 5-7 minutes.
3. Spice It Up:
Stir in the chili powder, ground cumin, chipotle chili powder, dried oregano, smoked paprika, salt, and freshly ground black pepper. Cook for an additional 2-3 minutes to enhance the flavors.
4. Add the Meats:
Now, add the Wilders Wagyu ground beef and fresh ground pork to the pot. Cook and crumble the meats until they are browned and cooked through, breaking them apart with a spatula as they cook.
5. Pour in the Beer:
Pour the cup of beer into the pot, stirring up any flavorful bits stuck to the bottom. Let it simmer for a few minutes to reduce slightly.
6. Combine the Rest:
Add the drained and rinsed black beans, kidney beans, crushed tomatoes, and diced tomatoes (with their juice) to the pot. Stir everything together until well combined.
7. Simmer to Perfection:
Reduce the heat to low, cover the pot, and let the chili simmer for at least 30 minutes to allow the flavors to meld together. For even better results, let it simmer for 1-2 hours, stirring occasionally.
8. Serve and Garnish:
Serve the completed Oink Oink Moo chili into separate bowls. Top each serving with a dollop of sour cream, a handful of shredded Cheddar cheese, sliced scallions, and a lime wedge for a zesty finish.
Danielle's Oink Oink Moo chili is the perfect blend of smoky, spicy, and savory flavors, making it an ideal choice for a cozy dinner or game day feast. Enjoy this chili with friends and family, and don't forget to customize the garnishes to suit your taste. It's a bowl of comfort you won't be able to resist!
