3 Delicious Ways to Cook a Brisket Without a Smoker
When many people think of brisket, their minds instantly go to the succulent flavors achieved through traditional smoking methods. While smoking is indeed a popular and delicious way to cook this cut of meat, it's far from the only one. Here we will explore 3 ways to prepare a Wilders brisket that are just as great!
1. Slow-Cooked Braised Brisket
Ingredients:
- 1 Wilders Wagyu brisket (your choice of size, cooking times may vary)
- Salt and pepper
- 2 tablespoons olive oil
- 2 onions, sliced
- 4 garlic cloves, minced
- 1 cup beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 bay leaves
- Fresh thyme sprigs
- Preheat your oven to 325°F (165°C).
- Season the brisket generously with salt and pepper.
- In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear the brisket on both sides until browned, then remove and set aside.
- In the same pot, add onions and garlic, cooking until softened.
- Stir in the beef broth, red wine, and tomato paste, scraping up any browned bits from the bottom of the pot.
- Return the brisket to the pot, add bay leaves and thyme sprigs, and bring to a simmer.

- 1/2 cup soy sauce
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
Instructions:
- Season the brisket with salt and pepper.
- Set your pressure cooker to the sauté function and heat the olive oil. Sear the brisket on all sides until browned, then remove and set aside.
- Add the onion and garlic to the pressure cooker, cooking until softened.
- Stir in the beef broth, soy sauce, ketchup, brown sugar, Worcestershire sauce, and smoked paprika.
- Return the brisket to the pressure cooker, ensuring it is covered with the liquid mixture.
- Lock the lid in place and set the pressure cooker to high pressure for 75 minutes.
- Once the cooking time is complete, allow the pressure to release naturally.

Ingredients:
- 1 Wilders Wagyu Brisket (your choice of size, cooking times may vary)
- Salt and pepper
- 2 tablespoons olive oil
- 2 cups beef broth
- 1 cup barbecue sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions:
- Preheat your oven to 300°F (150°C).
- Season the brisket generously with salt and pepper.
- In a roasting pan, heat olive oil over medium-high heat. Sear the brisket on both sides until browned.
- In a bowl, mix together the beef broth, barbecue sauce, Worcestershire sauce, garlic powder, and onion powder.
- Pour the mixture over the brisket in the roasting pan.
- Cover the pan tightly with aluminum foil and roast in the oven for 4-5 hours, or until the brisket is fork-tender.
