3 Delicious Ways to Cook a Brisket Without a Smoker

When many people think of brisket, their minds instantly go to the succulent flavors achieved through traditional smoking methods. While smoking is indeed a popular and delicious way to cook this cut of meat, it's far from the only one. Here we will explore 3 ways to prepare a Wilders brisket that are just as great! 


1. Slow-Cooked Braised Brisket

Ingredients:
  • 1 Wilders Wagyu brisket (your choice of size, cooking times may vary)
  • Salt and pepper
  • 2 tablespoons olive oil
  • 2 onions, sliced
  • 4 garlic cloves, minced
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • Fresh thyme sprigs
Instructions:
  1. Preheat your oven to 325°F (165°C).
  2. Season the brisket generously with salt and pepper.
  3. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear the brisket on both sides until browned, then remove and set aside.
  4. In the same pot, add onions and garlic, cooking until softened.
  5. Stir in the beef broth, red wine, and tomato paste, scraping up any browned bits from the bottom of the pot.
  6. Return the brisket to the pot, add bay leaves and thyme sprigs, and bring to a simmer.
  7. Cover the pot and transfer it to the preheated oven. Cook for 3-4 hours, or until the brisket is fork-tender.
  8. Remove the brisket, slice against the grain, and serve with the braising liquid. Enjoy!!

 2. Pressure Cooker Brisket

Ingredients:

  • 1 Wilders Wagyu brisket (your choice of size, cooking times may vary)
  • Salt and pepper
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika

Instructions:

  1. Season the brisket with salt and pepper.
  2. Set your pressure cooker to the sauté function and heat the olive oil. Sear the brisket on all sides until browned, then remove and set aside.
  3. Add the onion and garlic to the pressure cooker, cooking until softened.
  4. Stir in the beef broth, soy sauce, ketchup, brown sugar, Worcestershire sauce, and smoked paprika.
  5. Return the brisket to the pressure cooker, ensuring it is covered with the liquid mixture.
  6. Lock the lid in place and set the pressure cooker to high pressure for 75 minutes.
  7. Once the cooking time is complete, allow the pressure to release naturally.
  8. Remove the brisket, slice against the grain, and serve with the sauce from the pressure cooker. Enjoy!!

3. Oven-Roasted Brisket

Ingredients:

  • 1 Wilders Wagyu Brisket (your choice of size, cooking times may vary)
  • Salt and pepper
  • 2 tablespoons olive oil
  • 2 cups beef broth
  • 1 cup barbecue sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions:

  1. Preheat your oven to 300°F (150°C).
  2. Season the brisket generously with salt and pepper.
  3. In a roasting pan, heat olive oil over medium-high heat. Sear the brisket on both sides until browned.
  4. In a bowl, mix together the beef broth, barbecue sauce, Worcestershire sauce, garlic powder, and onion powder.
  5. Pour the mixture over the brisket in the roasting pan.
  6. Cover the pan tightly with aluminum foil and roast in the oven for 4-5 hours, or until the brisket is fork-tender.
  7. Remove the brisket from the oven, let it rest for 15-20 minutes, then slice against the grain and serve with juice from the pan. Enjoy!!
