Three DELICIOUS Back to School Breakfast Recipes

As the school year kicks off in the next couple weeks, busy mornings can make it challenging for everyone to enjoy a good breakfast. To help you start the day right, we've put together a few easy and delicious breakfast recipes that are perfect for those hectic school mornings. From a simple egg scramble casserole to delightful cinnamon rolls with bacon, these recipes are designed to be both quick and delicious! 

Easy Egg Scramble Casserole

Ingredients:

  • 8 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1lb Wilders Mild or Hot Ground Sausage
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  3. Heat the olive oil in a skillet over medium heat. Add the bell pepper and onion, sautéing until softened.
  4. Add the Wilders Ground Sausage to the skillet and cook for a few more minutes.
  5. Transfer the sautéed vegetables and meat to a greased baking dish. Pour the egg mixture over the top and sprinkle with cheese.
  6. Bake for 25-30 minutes, or until the eggs are set and the top is golden brown.
  7. Let cool slightly before slicing into squares and serving. 

Yogurt and Fruit Parfait

Ingredients:

  • 2 cups Greek yogurt
  • 1 cup granola
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp honey and/or maple syrup
  • 1/2 tsp vanilla extract (optional)

Instructions:

  1. In a medium bowl, mix the Greek yogurt with honey or maple syrup and vanilla extract.
  2. In serving glasses or bowls, layer a few spoonfuls of yogurt, followed by a handful of granola, and then a layer of mixed berries.
  3. Repeat the layers until you fill the glasses or bowls, finishing with a few berries on top.
  4. Serve immediately or cover and refrigerate for later. These Parfaits go great with Wilders Pinky Links- mild, hot, or maple!

Simple Cinnamon Rolls with Bacon

Ingredients:

  • 1 package of frozen puff pastry (2 sheets), thawed
  • 1/2 cup brown sugar
  • 2 tbsp ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1 tsp vanilla extract
  • 1lb Wilders Berkshire Bacon

Instructions:

  1. Preheat your oven to 400°F
  2. Place the bacon on a baking sheet lined with parchment paper or a wire rack. Bake for 15-20 minutes, or until the bacon is crispy. Remove from the oven and set aside
  3. Preheat your oven to 375°F. Grease a baking sheet with parchment paper.
  4. Roll out the thawed puff pastry sheets on a lightly floured surface and brush the melted butter over the entire surface of the pastry sheets.
  5. In a small bowl, mix the brown sugar and ground cinnamon together. Sprinkle this mixture evenly over the buttered pastry.
  6. Starting from one end, tightly roll up each pastry sheet into a log. Cut each log into 1-inch slices.
  7. Place the slices in the prepared baking dish or on the baking sheet, spacing them slightly apart.
  8. Bake for 20-25 minutes, or until the rolls are golden brown and puffed up
  9. While the rolls are baking, mix the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the consistency by adding more milk if needed.
  10. Remove the rolls from the oven and let them cool slightly before drizzling with the icing.
  11. Serve the cinnamon rolls warm with the crispy bacon on the side & enjoy!!
