Three DELICIOUS Back to School Breakfast Recipes
As the school year kicks off in the next couple weeks, busy mornings can make it challenging for everyone to enjoy a good breakfast. From a simple egg scramble casserole to delightful cinnamon rolls with bacon, these recipes are designed to be both quick and delicious!
Easy Egg Scramble Casserole
Ingredients:
- 8 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1lb Wilders Mild or Hot Ground Sausage
- 1 bell pepper, diced
- 1/2 onion, diced
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
- Heat the olive oil in a skillet over medium heat. Add the bell pepper and onion, sautéing until softened.
- Add the Wilders Ground Sausage to the skillet and cook for a few more minutes.
- Transfer the sautéed vegetables and meat to a greased baking dish. Pour the egg mixture over the top and sprinkle with cheese.
- Bake for 25-30 minutes, or until the eggs are set and the top is golden brown.
- Let cool slightly before slicing into squares and serving.
Yogurt and Fruit Parfait
Ingredients:
- 2 cups Greek yogurt
- 1 cup granola
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tbsp honey and/or maple syrup
- 1/2 tsp vanilla extract (optional)
Instructions:
- In a medium bowl, mix the Greek yogurt with honey or maple syrup and vanilla extract.
- In serving glasses or bowls, layer a few spoonfuls of yogurt, followed by a handful of granola, and then a layer of mixed berries.
- Repeat the layers until you fill the glasses or bowls, finishing with a few berries on top.

Simple Cinnamon Rolls with Bacon
Ingredients:
- 1 package of frozen puff pastry (2 sheets), thawed
- 1/2 cup brown sugar
- 2 tbsp ground cinnamon
- 1/4 cup unsalted butter, melted
- 1 cup powdered sugar
- 2-3 tbsp milk
- 1 tsp vanilla extract
- 1lb Wilders Berkshire Bacon
Instructions:
- Preheat your oven to 400°F
- Place the bacon on a baking sheet lined with parchment paper or a wire rack. Bake for 15-20 minutes, or until the bacon is crispy. Remove from the oven and set aside
- Preheat your oven to 375°F. Grease a baking sheet with parchment paper.
- Roll out the thawed puff pastry sheets on a lightly floured surface and brush the melted butter over the entire surface of the pastry sheets.
- In a small bowl, mix the brown sugar and ground cinnamon together. Sprinkle this mixture evenly over the buttered pastry.
- Starting from one end, tightly roll up each pastry sheet into a log. Cut each log into 1-inch slices.
- Place the slices in the prepared baking dish or on the baking sheet, spacing them slightly apart.
- Bake for 20-25 minutes, or until the rolls are golden brown and puffed up
- While the rolls are baking, mix the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the consistency by adding more milk if needed.
- Remove the rolls from the oven and let them cool slightly before drizzling with the icing.
- Serve the cinnamon rolls warm with the crispy bacon on the side & enjoy!!
