How to Cook a 100% Fullblood Wagyu Ribeye in a Cast Iron Skillet
One of our favorite ways to cook a ribeye is in a cast iron skillet. Cast iron creates an incredible crust while allowing the rich marbling to render beautifully, giving you a steak that's perfectly seared on the outside and tender on the inside.
Step 1: Bring Your Steak to Room Temperature
Remove your ribeye from the refrigerator about 30 to 45 minutes before cooking.
Allowing the steak to warm slightly helps it cook more evenly from edge to center.
Step 2: Keep the Seasoning Simple
Pat the steak dry with a paper towel before seasoning.
We recommend:
- Kosher salt
- Fresh cracked black pepper
That's it.

Step 3: Heat Your Cast Iron Skillet
Place your cast iron skillet over medium-high to high heat until it's very hot.
Because Wagyu contains beautiful intramuscular marbling, you don't need much cooking oil. If desired, add a small amount of high smoke point oil just before placing the steak in the pan.
Step 4: Sear the Steak
Carefully place the ribeye into the hot skillet.
Sear for approximately 2 to 3 minutes per side, depending on the thickness of the steak, until a rich golden-brown crust develops.
Rather than relying strictly on time, we always recommend using a meat thermometer.
For the best eating experience, we recommend cooking to medium rare.
Internal Temperature Guide
- Rare: 120–125°F
- Medium Rare: 130–135°F
- Medium: 135–145°F
Remember that the steak will continue cooking as it rests, so consider removing it from the pan a few degrees before your desired temperature.
Step 5: Add Butter and Aromatics
During the final minute of cooking, add a tablespoon of butter along with a few cloves of smashed garlic and fresh rosemary or thyme.
Tilt the skillet and spoon the melted butter over the steak several times. This adds incredible flavor while complementing the richness of the Wagyu.
Step 6: Let It Rest
Transfer the steak to a cutting board or plate and allow it to rest for 5 to 10 minutes.
Resting gives the juices time to redistribute throughout the meat, resulting in a more tender and flavorful steak.
