Fortuna brings a fresh perspective to Italian dining, combining traditional cooking techniques with seasonal ingredients and a welcoming atmosphere. Behind Fortuna are restaurateur Giorgios Bakatsias and Executive Chef and Partner Chris Lewnes. Bakatsias brings more than three decades of hospitality experience, while Lewnes draws from his Italian American upbringing and classical French training. His background includes kitchens such as Bâtard, Augustine, and Sartiano’s in New York City. Together, they bring that experience to a restaurant with its own connection to coastal North Carolina.

Fortuna’s menu starts with careful sourcing and an appreciation for what’s in season. With an emphasis on organic ingredients, regional seafood, and simple preparations, the kitchen gives each ingredient room to shine.
That approach is something we appreciate at Wilders. From raising our cattle on our farm in Turkey, North Carolina, to working with chefs who bring our beef to their menus, we know how much care goes into a meal long before it reaches the table.

Fortuna is currently serving our Wilders Wagyu as Tagliata, bringing our locally raised 100% Fullblood Wagyu beef into their Italian menu.
Known for its rich marbling, tenderness, and flavor, our Wagyu reflects the work our farm team puts in every day. Seeing it featured by Chef Chris and the Fortuna team gives guests another way to experience Wilders and connects the work happening on our farm with the creativity happening in their kitchen.
