We did a s&p seasoning. We wanted to really taste the beef. We grilled it on the bbq. Med rare. It was very tough and chewy. Skirt is one of my favorite cuts to bbq n slice thin like flank. I was pretty disappointed… might have just been the one steak.. it was a birthday dinner .
