GARLIC BUTTER WAGYU NEW YORK STRIP

Ingredients:

Instructions:
  1. Preheat the grill to high heat
  2. Season the Wagyu New York Strip steak(s) generously with salt and pepper.
  3. Grill the steak for about 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness.
  4. While the steak is grilling, melt butter in a small saucepan over medium heat. Add the minced garlic, parsley, and thyme. Cook for 1-2 minutes, until the garlic is fragrant and lightly golden.
  5. Once the steak is grilled to your liking, remove from the grill and immediately brush with the garlic butter mixture. Let the steak rest for about 5 minutes to allow the juices to redistribute.
  6. Serve the steak warm, garnished with additional parsley if desired. 

BERKSHIRE PORK BRATWURST WITH SAUTÉED PEPPERS AND ONIONS

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers, seasoning with salt and pepper. Sauté until the vegetables are soft and lightly caramelized, about 8-10 minutes. Set aside.
  3. Place the bratwursts on the grill, turning occasionally, until evenly browned and cooked through, about 15-20 minutes. Ensure they reach an internal temperature of 160°F (71°C) for safety.
  4. If desired, during the last few minutes of grilling the bratwursts, open the hoagie rolls and place them cut-side-down on the grill to toast lightly.
  5. To assemble, place each grilled bratwurst in a bun, top with a generous helping of sautéed peppers and onions, and add mustard or your preferred condiments.
  6. Serve immediately and enjoy!

CRISPY BACON AND AVOCADO SUMMER SALAD

Ingredients:

  • Wilders Berkshire Seasoning Bacon Pieces 
  • 6 cups mixed greens (like arugula, spinach, and romaine)
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cucumber, sliced
  • 1/4 cup corn kernels, fresh or thawed from frozen
  • 1/4 cup goat cheese, crumbled

For the Citrus Vinaigrette:

  • 1/3 cup olive oil
  • 2 tablespoons orange juice, freshly squeezed
  • 1 tablespoon white wine vinegar
  • 1 teaspoon honey
  • Salt and pepper, to taste

Instructions:

  1. In a large salad bowl, combine the mixed greens, diced avocado, cherry tomatoes, sliced cucumber, red onion, and corn kernels.
  2. In a skillet, cook the Wilders seasoning bacon pieces over medium heat until crispy. Remove from heat and drain on paper towels.
  3. To make the dressing, whisk together olive oil, orange juice, white wine vinegar, and honey in a small bowl. Season with salt and pepper to your liking.
  4. Add the seasoned bacon pieces and goat cheese to the salad.
  5. Drizzle the citrus vinaigrette over the salad and toss gently to combine everything well.
  6. Serve the salad immediately, or chill briefly in the refrigerator if desired before serving.
